Screwdriver

In the 1950s US oilmen in the Arabian desert used screwdrivers to stir their vodka-orange mixes, giving this cocktail its name.

Zombie

This cocktail was created in Hollywood in 1934.

INGREDIENTS:

  • 20ml (2/3 oz) white rum
  • 20ml (2/3 oz) golden rum
  • 20ml (2/3 oz) dark rum
  • 10ml (1/3 oz) cherry brandy
  • 10ml (1/3 oz) freshly pressed pineapple juice
  • 30ml (1 oz) freshly squeezed orange juice
  • 10ml (1/3 oz) freshly squeezed lime juice
  • 20ml (2/3 oz) papaya juice
  • Dash almond syrup
  • Dash 151-proof Demerara rum

Mai Tai

In this classic cocktail, the almond syrup marries beautifully with the sweet, toffee flavours of the rum, while the citrus of the Grand Marnier provides intensity.

INGREDIENTS:

  • 15ml (1/2 oz) Grand Marnier
  • 15ml (1/2 oz) almond syrup
  • 60ml (2 oz) Appleton Estate V/X aged rum

Rum Swizzle

This perfect beach cocktail is long and tangy and carries a great herbal kick from the bitters. Pale pinky-beige in colour, it is just as refreshing but not quite as strong as a Rum Punch.

INGREDIENTS:

  • 60ml (2 oz) white rum
  • 90ml (3 oz) soda water
  • 15ml (1/2 oz) freshly squeezed lime juice
  • 1tsp caster sugar
  • 2 dashes Angostura bitters
