This is a cocktail for hot afternoons. The Campari is refreshingly bitter, and the bubbles of the bitter lemon enhance the astringent style of the drink.
INGREDIENTS:
- 30ml (1 oz) Campari
- 30-50ml (1-1 2/3 oz) Schweppes bitter lemon
EQUIPMENT:
- Mixing glass
- Stirring spoon
- Chilled Martini glass
MIXING METHOD:
Place all the ingredients in a mixing glass with ice. Stir and strain into the Martini glass. Garnish with a slice of lemon on the rim.

The combination of sweet Cointreau, bitter Campari, and refreshing tonic makes this cocktail deliciously complex. It is an ideal aperitif, or holiday charmer. All the liquid ingredients should be well chilled to help hold the cocktail’s flavours together.
INGREDIENTS:
- 30ml (1 oz) Cointreau
- 45ml (1 1/2 oz) Campari
- 30ml (1 oz) lemon or lime juice
- Tonic water
EQUIPMENT:
- Shaker
- Strainer
- Highball glass
MIXING METHOD:
Fill the shaker with ice and pour in all the ingredients except the tonic. Shake well. Strain into an ice-filled highball. Top with tonic.
